Smoked Fish & Kumara Fritters

Ingredients:

500g Cooked Mashed Kumara
250g Smoked Fish (boned & flaked)
1/4 Cup Chopped Parsley
1 tsp Crushed Garlic
2 Spring Onions, Finely Sliced
1 Egg
3 tbsp Flour
1 tsp Baking Powder
1/2 Cup Oil – to cook in
Sour Cream to serve

Method:

Mix all ingredients together except for the oil
Form the mixture into patties
Shallow fry patties in the oil until golden and firm to the touch (cook both sides)
Drain and serve with sour cream as an accompaniment.

Note: you can substitute pumpkin or potato for the kumara or use a mixture of any
